Game's camp recipes:

 

Chicken and Rice One-pot:

2 c minute rice

1 five oz. can of boned  chicken (or pre-cooked boneless breast)

2 heaping tbs of dehydrated onions

2 heaping tbs of dried celery leaves

salt and pepper to taste

1 chicken bullion cube

Bring 2 c of water to boil with bullion cube

Dump in other contents

Simmer 5 min and eat

Garnish with parmesean cheese, S&P

 

Chicken and Dumplings One-pot

1 pkg dry chicken noodle soup (e.g. Knoor)

1  five oz can chicken (or pre-cooked boneless breast)

1 c Bisquick

2 tsp powdered milk

1 chicken bullion cube

Add soup to 3 cups boiling water, lower heat to a simmer.  Mix dried milk and bisquick together and then with 1/3 c water and add (pour on top...don't stir).  Simmer 10 min. uncovered.

 

Devil's Thumb Stew:

4 cups water

1 pkg. Knoor vegetable soup mix

1 beef bullion cube

1 Kraft 7 1/4 oz. macaroni and cheese dinner

1 can ham (or tuna), 6.5 oz (ham and tuna also come in convenient pouches

1/2 c  minute rice

Bring water to boil, add soup mix and macaroni.

Simmer until macaroni is 1/2 done

Add cheese and ham, then enough rice to obtain desired consistency.

Cook until rice and macaroni are done.

 

 

 

Spanish Rice and Chilis (makes 3 servings)

1 box of Spanish Rice mix

1 small can of whole green chilies

1/3 brick of Cojack cheese (monterey jack and colby)

Re-package the rice and seasoning into a ziplock bag (be sure to cut out the directions and place in bag.

Open the can of chilies and cut nto pieces; place in ziplock bag

Cook rice as per directions; including the chilies

When rice is about half done (by time), add cheese, which has been cut up into squares.

When cheese is melted, it's dinner time!

 

Chicken and Stuffing (a favorite!)

1 box of stuffing mix (chicken flavor or whatever you like).

1 can of chicken, or, 1-2 parboiled (pre-cooked) chicken breasts, deboned.

1-2 tbls of dried vegetable flakes (available in spice section)

1/2 to 1 tbls dried onion

Re-package the stuffing into ziplock bag before trip (cut out directions and put into bag).

Make the stuffing per directions, adding slightly more water  to accomodate the dried veggies.

Add the vegetable flakes and onion at beginning, and the chicken when the stuffing is about half done.

For variety, this dinner can also be made with pre-cooked hamburger or steak strips instead of chicken; use a beef or other flavored stuffing mix..

 

One for the fishermen and women:

 

Seviche

2 tbls raspberry vinegar

1 tbls hot sauce

1 medium trout, cleaned and cut into 1-inch squares

1 large onion, diced

3 tbls chopped cilantro

1 fresh yellow pepper, finely chopped

1 fresh red pepper, finely chopped

1/4 c  lime juice

Salt and Pepper to taste

At Home:  Mix vinegar and hot sauce together in a small, leakproof bottle

In camp:  Catch trout at dawn, clean it, and immediately combine all the ingredients in a 16 oz or larger tightly sealed screw-top container (e.g. Nalgene bottle).  Carry the container deep in your pack until dinner.  Serve with tortilla chips and salsa.  Serves two.

[Note...the acid of the lime juice and vinegar will chemically "cook" the fish]

 

 

Breakfast:

 

Fried Biscuits

1 1/2  to 2 c of Bisquick mix

7 level tbls of dried milk

Mix to dumpling consistency (not as runny as pancakes)

Melt margarine in fry pan and spoon drop biquick mix.

Fry until golden brown and cooked through (careful not to burn bottom!)

Serve with honey, jelly, or they're great all by themselves

 

Potato Pancakes

1 pkg instant mashed potatoes (determine your own serving size)

1/2 to 1 tbls dried onion

1/2 to 1 tbls dried vegetables (in a small jar in spice section)

Make like mashed potatoes as per directions (adding onion and dried vegetable)

Then, fry in margarine.
