Pig Roast

This is a do-it-yourself kit for a troop pig roast courtesy of Troop 229:

pick date at annual planning meeting, check announce pig roast

3 to 4 weeks ahead, order pig 10Olbs to 140lbs,   2.35 Ib from Mt. Mckinley Meats at (907) 745 5232

call to organize potluck, need coleslaw, buns, side dishes, salads, desserts, drinks

get charcoal, heavy duty aluminum foil, Costco. hickory and mesquite or apple wood chips, Wal-Mart

arrange for plates, plastic ware, drinking cups, and napkins

drinks provided by troop or ask each family to bring

call one week in advance to check on pig

call three days in advance of pick up to be sure that pig is thawed

get check amount from supplier and pick up check from treasurer
 
 
 
DAY BEFORE PIG ROAST

pick up pig 1 day in advance, season with salt or marinade overnight

buy onions, hot peppers, bell peppers, ham hocks, hamburger, dry red beans, pinto beans

prep work, cut onions, peppers, brown hamburger, boil ham hocks for 2 hours, soak beans

get together spices, condiments, cobble, rice, bean ingredients

water jugs, propane cooker, propane

tables

take roasting pit to camp, assemble night before roast cover cooker with aluminum foil

cooking utensils, forks, tongs, knives, thermometers,
 
18
 
aprons, dish cloths, dish soap, hand soap, wash tub, wash basin

bring something to prop up charcoal from ground, blocks or sheet metal
 
20
 
get rebar to reinforce pig grill on roaster

bring 55 gal drum ends to set Dutch ovens on
 
 
 
DAY OF PIG ROAST

get up at 4:30 am. To camp by 5 am

charcoal starter, start charcoal

be sure air can get into cooker or fire will suffer

place coals in piles of three or four, six inches apart

add soaked wood chips for desired effect

slap piggy on grill

cover with lid

set up propane cooker

start coffee

make breakfast, bacon eggs toast

sit in chairs

add charcoal as needed, 45 minutes or so

turn piggy after 3 or four hours

start beans at noon
